In the perched village of Villeneuve-Loubet, between Nice and Antibes, the Escoffier Museum of Culinary Art occupies the birthplace of Auguste Escoffier, the legendary chef known as the "king of cooks and cook of kings", who revolutionised French gastronomy and codified the modern professional kitchen. In the house where he was born in 1846, the museum celebrates his life and genius through documents, menus, kitchen equipment and, most spectacularly, an astonishing collection of decorative pieces in sugar and pastillage — delicate sculptures made entirely of sugar.
